Named For A Woman Who Didn't Back Down
During the Mexican Revolution, thousands of women — soldaderas — followed the armies, fighting and keeping them running. A few rose to actual command, earning real military rank: a coronela, a colonel, wasn't a camp follower but an officer other soldiers answered to. Women like Petra Herrera, who led hundreds of troops into battle, made that legend real, and it's lived on ever since in corridos like "La Adelita" and in the image that still follows them — rebozo crossed with bandoliers, rifle in hand, unflinching. That's the woman painted larger than life on our wall, and the reason she's watching over this dining room.
Opening a restaurant from nothing takes its own kind of nerve — the same leap of faith a coronela took when she stepped up to lead. We took that leap because we wanted one thing above all: a place where family actually sits down together. Where you bring your familia, a coworker, or whoever matters to you, and build memories over a bowl of menudo, a taco of crispy tripas or mollejas, fajitas sizzling off the comal, or a quesadilla pulled hot off the griddle. That's the whole reason La Coronela exists.
What hasn't changed is the kitchen: dried chiles toasted by hand, salsas ground fresh, and recipes that don't get shortcuts.
